Good morning all!
Mmmm I’m beginning to LOVE the fact that I’m taking more control of what I eat by cooking for myself. This morning’s cooking adventure was HEALTHY HOME-MADE FRENCH TOAST (yummmm!). Oh man, it was sooo good and WAY better for you than the stuff you get at a restaurant. I got the recipe from the Hungry Girl Cookbook and it was amazing! Instead of using white bread, whole eggs and regular sugar, the recipe suggests a whole-wheat bread, egg substitute and Splenda… JUST AS GOOD (if not better!) than the regular version. (I topped it with some extra cinnamon and sugar-free syrup of course).
I had some pan-fried honey ham and orange juice along with it… a very filling and satisfying breakfast to say the least!
I’m so glad it’s Christmas break, but I can’t believe that Christmas is only 3 days away!!! Ahhhh!!!
This realization of Christmas is also a reminder that New Year’s and my next Doctor’s appointment for my second brain surgery is quickly approaching too… and my mom’s 50th birthday!!
This time of year seems to go by soooo fast–well time in general seems to go y faster the older I get.
Sometimes I need to just sloooooowwww it all down! But until I CAN slow things down, I’ve got a bunch of count-downs ticking off in my mind, but really– what else is new!
